Roasted Wild Hare Saddle...
I marinated the Hare saddle (500 - 600 gram) for approximately 20 hours in;
1/3 cup - Olive oil
1 tsp - Herbs de Provence
1tsp - Sea salt
1 tbsp - Freshly ground pepper
1 tbsp - Oregano
